What's Cooking?

High Protein Salad Recipe, By Hebbar’s Kitchen

Indulge in a protein-packed delight with our chickpea salad, featuring savory tofu/paneer cubes atop a vibrant medley of fresh vegetables for a wholesome and delicious salad.

​Ingredients

​

Salad Dressing:

  • ½ cup olive oil

  • 2 tbsp lemon juice

  • ½ tsp mixed herbs

  • ½ tsp pepper, crushed

  • ½ tsp garlic paste

  • ½ tsp salt

​

Roasted Tofu/Paneer:

  • 2 tsp olive oil

  • 1 cup tofu/paneer

  • ¼ tsp pepper, crushed

  • ¼ tsp salt

​

Chana Salad:

  • 2 cup chana/chickpea, boiled

  • ½ onion, sliced

  • ½ cucumber, sliced

  • 5 cherry tomato, halves

  • ½ capsicum, sliced

  • 2 chilli, chopped

  • handful salad leaves

  • handful lettuce

  • handful moong beans sprouts

Directions

​

Homemade Salad Dressing:

  • Firstly, in a bowl take ½ cup olive oil, 2 tbsp lemon juice, ½ tsp mixed herbs, ½ tsp pepper, ½ tsp garlic paste and ½ tsp salt.

  • Mix well making sure everything is well combined.

  • Salad dressing is ready. keep aside.

​

Roasted Tofu/Paneer:

  • Firstly, in a pan heat 2 tsp olive oil and add 1 cup tofu/paneer

  • Roast on low flame until the tofu/paneer turns crisp.

  • Now add ¼ tsp pepper and ¼ tsp salt.

  • Mix well making sure the spices are coated well. 

​

Chana Salad:

  • Firstly, in a bowl take 2 cup chana. make sure to soak and boil the chickpeas.

  • Add ½ onion, ½ cucumber, 5 cherry tomato, ½ capsicum and 2 chilli.

  • Also, add 1 tbsp prepared salad dressing.

  • Mix well making sure everything is well combined.

  • Now add handful salad leaves, handful lettuce and handful moong beans sprouts.

  • Mix well combining everything well.

  • Finally, top with crispy tofu/paneer and enjoy chana salad with salad dressing as required.

IB: What is the sweetest memory from your childhood days? 

TH: I greatly enjoyed the annual Soccer Camp I would attend during the summer in the Bay Area. It accepted various age groups so I was able to attend with one of my younger sisters.

 

6 hours a day for about two weeks of drills, scrimmages and training. Lacing up my cleats, putting on my shin guards and the smell of fresh cut grass! Not to mention the fruit punch in the water coolers. We used to call it "bug juice".

 

The sugar content was so high that every flying pest from miles around would descend on an unattended cup. While it was probably of questionable nutritional value, it sure amped up your energy!

IB: What is your time management mantra?

TH: First things first. In my position, distractions abound and we can be working on as many as six opportunities at a time. It is essential that I remember to finish my thought, proofread, hit send or set a task. If I allow myself to jump from train to train I will miss something. Maintaining focus on the task at hand seems to create more hours in the day for me and I can invariably get everything done.

​

IB: What is a hidden talent you have?

TH: I don't know how hidden it is... But I am a very competent motorcycle rider. My current bike is a 2019 Kawasaki ZX10r. I've been riding for almost 20 years and cut my teeth in the Santa Cruz mountains (some of the best mountain riding in the world). The combination of rush and calm I get from pushing my riding skills to the limit is one of the great joys of my life. I'm a firm believer that all talent is rooted in joy!

​

IB: If you could get a new skill in 10 minutes, what would it be?

TH: An entirely new skill in 10 minutes? I'm a big fan of hand eye coordination. So I'd have to go with juggling! I think that would be a very meditative pastime if you could get past the initial months or years of frustration. Any skill that can be employed to restore zen is a good thing.

​

IB: What is your favourite pastime?

TH:  I love playing chess. In 2023 alone I played over 1500 games of 10m Rapid. That said, I'm not very good and tend to employ the same opening as either Black or White (rookie mistake) and by playing rapid and blitz just reinforce my own bad habits! One of my resolutions for 2024 is to actually improve my game. Take online lessons, learn new openings and play slower, double checking my moves before they are executed. I also need to learn to review the games I've lost! I have a nasty habit of only reviewing the games where I emerge victorious, prefering to revel in my victories instead of learning from my mistakes.

​

IB: What if you had six months of paid vacation? Where would you travel?

TH: Wait, you want me to leave the Bay Area?! I have the majority of my family in the North of England so I would likely spend some time there and also visit Scotland. More importantly, and strange, I know, I have never been to India! First priority would be to track down Shripad in Pune and shake that man's hand. He's pulled me out of the fire so many times he should drive around in a big red truck! That job done, I'd return to California and relax in a cabin on the shore of Lake Tahoe for the remaining 4 months.

​

IB: What are the kind of books you like to read or movies you like to watch?

TH: I am an avid reader so narrowing down genres is really difficult. Two books I recently read are of the genre "speculative fiction" (essentially science fiction dealing with the world we live in and focused on possible, if not probable future technology). Neal Stephenson's "Termination Shock" and Ted Chiang's collection of short stories "Exhalation".

​

IB: What's the one thing you like about Infoglen?

TH: There is definitely more than one! At the core though I have to point out our pervading philosophy of empathy and service. We have a "right to win" with our prospects, partners, and clients because we genuinely care about their outcomes and have the wherewithal to achieve them. As your Sales Director that removes a lot of the obstacles usually inherent to the role, not to mention making me proud to call this company Home!
